“Summertime and the livin’ is easy . . .” During the summer we strive for less hectic schedules that allow us time to enjoy simple pleasures. I’d like to share a favorite recipe that’s perfect on a hot summer day, and when it’s too hot to do anything but read, of course you’ll need a book to add to your list.
Frozen German Chocolate Pie
1 (4 oz) pkg Baker’s German sweet chocolate
1/3 cup milk, divided
4 oz cream cheese, very softened
2 T sugar
1 tub (8 oz) Cool Whip thawed
1 ready to use graham cracker crumb crust. I used 15 finely crushed Oreo cookies and 3 Tbsp melted butter for my crust. It’s yummy.
Microwave chocolate and 2 Tbsp of milk in large microwaveable bowl on HIGH for 1-1/2 to 2 min or until chocolate is almost melted, stirring after each min. Stir until chocolate is completely melted. Add cream cheese, sugar and remaining milk; beat with wire whisk until well blended. Refrigerate 10 min to cool.
Add whipped topping; stir gently until well blended. Spoon into crust. Can garnish with chocolate curls or whipped cream dollops.
Freeze 4 hours or until firm. Let stand at room temperature or in frig about 15 min until pie can be cut easily. Store leftover pie (if there is any!) in freezer.

The Guest List by Lucy Foley
Set at an upscale wedding on a remote Scottish isle, The Guest List starts with a murder and keeps the reader guessing as to the victim’s identity until the last pages. Ms Foley writes each chapter from a different wedding guest’s point of view, each of whom may have a motive for murder. I felt touches of Agatha Christie and Alfred Hitchcock in this reading which was enjoyable. The plot developed with secrets, lies, and betrayal, which pairs well with a piece of frozen chocolate pie on a summer afternoon.

As we approach our nation’s birthday this year, we find ourselves in the middle of a political debate. Wherever you are, however you view our state of affairs, I hope you will join me in celebrating the many things that make our country special and at the top of the list—the goodness and greatness of its people!
